Sauvage is a unique New Zealand wine style pioneered by Sacred Hill in 1992. Ripe Sauvignon Blanc grapes are hand picked and whole bunch pressed to premium French barrels for fermentation and maturation. Native yeasts are encouraged to add complexity and richness.
Lifted citrus, quince, lime and lemongrass aromas with nutty nuances. Very tight and structured palate, with fine citrus and mineral characters, taut acidity and superb length. The aftertaste is dried herbs, dried pineapple, chalky minerality and hints of oyster shell.
Cellaring and aging for maximum pleasure is recommended by winemaker Tony Bish.
