Boulders Prosecco Style Riesling

A crisp and refreshing wine with a subtle effervescence is a new style for NZ. The subtle effervescence has been inspired by the Prosecco wines from Northern Italy and Slovenia. Full of floral and citrus flavours. Combined with a well balanced acidity provides a clean lingering finish.
The wine has been carefully crafted by renowned wine maker Allan Johnson. The Riesling fruit harvested early to achieve the right acidity balance with a target alcohol content of 9 %. The fruit has been crushed and membrane pressed, settled for 3 days and clear juice racked. An aromatic yeast (Siha 7) and a long cool fermentation (12 to 14 deg) has enhanced unique flavours of the fruit. The ferment has been chilled to 5 deg to retain a subtle effervescence with residual sugar of 30g / lt. |
